Hugh has a clear vision about the way that he sees wine and produces accordingly. He is a firm believer in the wine and food experience. Neither is magic. Vines on the original property date back to the 1940's, saved from the vine pull scheme by Dr John Possingham in 1980. Possums Wines were established in 2000, prior to this date the grapes were sold on contract to neighbouring McLaren Vale producers. Possums Wines are produced on site by South African winemaker Pieter Breugem.

In 1994, fourth generation vigneron, David Pridmore launched the Sylvan Springs wine label with great success. Naming the wine Sylvan Springs after the family homestead and incorporating the family crest, the 'sun', into the label.
