Hand harvested and sorted grapes were gently whole bunch pressed to French hogs heads and puncheons and allowed to ferment by the action of naturally present indigenous yeast. Extended lees contact and a degree of malo-lactic fermentation added weight and complexity to the palate.

Dromana Estate Late Harvest Arneis 2011 (375ml) (RRP $18.00)
Fruit was harvested after being left on the vine for an additional ten weeks & fermented solely in old oak. Once it was determined that the fermenting Arneis juice had reached a desirable balance of sugar & acid the activity of the yeast was halted by chilling the wine to 3°C. The wine was kept in oak for the duration of its development and is presented to you as a raw product, being spared any harsh fining processes or level of filtration.

Fruit was gently whole bunch pressed to stainless steel and ferment initiated by the addition of a selected strain of specialty yeast to maximise aromatics. After primary ferment the wine was transferred to French oak for the duration of its development so as to build texture and mouth feel.
